Step-by-Step Instructions
  1. Begin by washing and chopping your bell peppers, zucchini, and broccoli into bite-sized pieces.
  2. Cut the chicken into cubes, roughly 1 inch each.
  3. In a large pot, bring salted water to a rolling boil. Add the orzo and cook according to package instructions, for about 8-10 minutes.
  4. Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken cubes and sauté for about 5-7 minutes until cooked through.
  5. Once the chicken is cooked, add minced garlic and sauté for about 1 minute before adding the bell peppers, zucchini, and broccoli. Sauté until tender-crisp, about 5 minutes.
  6. In a small bowl, whisk together soy sauce and fresh lemon juice. Pour this mixture over the chicken and veggies, stirring well.
  7. Add the drained orzo back into the skillet and gently toss everything together, cooking for another 2 minutes until heated through.
