Method

Step-by-Step Instructions
  1. In a large mixing bowl, combine 2.2 pounds of ground beef or lamb with a grated onion, three grated garlic cloves, and ¼ cup of plain yogurt. Add 2 tablespoons of olive oil, salt, pepper, 2 teaspoons of cumin, 1 tablespoon of sweet paprika, and 2 teaspoons of oregano. Mix thoroughly until sticky, about 3-5 minutes.
  2. Divide the meat mixture into five equal portions. On parchment paper, roll each portion into a thin rectangle, approximately ½ inch thick.
  3. Peel off the top layer of parchment paper, then roll each meat sheet tightly into a log shape. Twist the ends of the parchment to secure.
  4. Preheat your oven to 200°C (400°F). Place the meat rolls on a baking tray lined with parchment and bake for 20-25 minutes, until cooked through.
  5. Let the meat rolls rest for 5-10 minutes before slicing them into kebab-sized pieces. Serve warm in pita with your choice of fillings.

Notes

Use ground beef or lamb with at least 20% fat for best results. Mixing by hand helps achieve the ideal texture for kebabs. Avoid overbaking to maintain tenderness.
