Preheat your oven to 400°F (200°C).
In a skillet over medium heat, add the olive oil and ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat.
Stir in the taco seasoning and follow package instructions, usually adding a little water and simmering for a few minutes.
On a baking sheet, place one tortilla and spread the refried beans evenly over the top.
Layer half of the seasoned beef over the beans, followed by half of the salsa and half of the cheddar cheese.
Place the second tortilla on top and repeat the layering process with the remaining beef, salsa, and cheese.
Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let it cool for a few minutes. Top with lettuce, diced tomato, black olives, green onions, and a dollop of sour cream before slicing.
