Ingredients

For the Roast
  • 3 lbs Chuck Roast substitutes: brisket or pork shoulder
For the Vegetables
  • 4 medium Carrots alternatives: parsnips or sweet potatoes
  • 3 large Potatoes preferably Yukon gold or red potatoes
  • 2 medium Onions preferably yellow onions
For the Gravy
  • 4 cups Beef Broth alternatives: vegetable broth
  • 2 tablespoons Cornstarch use certified cornstarch for gluten-free
  • 1 cup Optional Red Wine alternatives: more beef broth or balsamic vinegar
For Extra Flavor
  • 2 tablespoons Fresh Herbs (Rosemary/Parsley) consider adding thyme for additional flavor

Equipment

  • Slow Cooker

Method

  1. Prep your vegetables by slicing the carrots, potatoes, and onions into large chunks. Season the chuck roast generously with salt and pepper.
  2. Optional: Sear the chuck roast in a skillet over medium-high heat for 3-4 minutes on each side until browned.
  3. Layer the prepared vegetables around the roast in the slow cooker. Pour in the beef broth and optional red wine.
  4. Set the slow cooker to LOW for 7-8 hours or HIGH for 4-5 hours. The roast is done when it easily shreds with a fork.
  5. Remove the meat and vegetables and whisk together cornstarch and cold water, then stir it into the remaining broth. Cook on high until thickened.
  6. Return the meat to the pot or slice and serve it on a plate, drizzling with gravy. Garnish with fresh herbs.

Notes

Chunk your veggies for better texture. Optionally, sear the meat for added flavor. Make sure the chuck roast is fully thawed before cooking. Allow the roast to rest before slicing to retain juices.
