- Preheat your oven to 400°F (200°C). Prick the sweet potatoes a few times with a fork and place them on a foil-lined baking sheet. Roast for 40–50 minutes until soft.
- Allow the sweet potatoes to cool for about 20 minutes.
- Lower your oven temperature to 350°F (175°C). In a mixing bowl, whisk together granulated sugar, melted butter, milk, and vanilla extract.
- Peel the cooled sweet potatoes and mash them. Mix in the egg until fully combined.
- Pour the sweet potato mixture into a greased 20-ounce baking dish and bake for about 20 minutes.
- Remove from oven and sprinkle mini marshmallows on top. Bake for an additional 5-10 minutes until golden and toasted.
