Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Prick the sweet potatoes a few times with a fork and place them on a foil-lined baking sheet. Roast for 40–50 minutes until soft.
  2. Allow the sweet potatoes to cool for about 20 minutes.
  3. Lower your oven temperature to 350°F (175°C). In a mixing bowl, whisk together granulated sugar, melted butter, milk, and vanilla extract.
  4. Peel the cooled sweet potatoes and mash them. Mix in the egg until fully combined.
  5. Pour the sweet potato mixture into a greased 20-ounce baking dish and bake for about 20 minutes.
  6. Remove from oven and sprinkle mini marshmallows on top. Bake for an additional 5-10 minutes until golden and toasted.
  7. Serve immediately and enjoy!
