Ingredients
  

For the Casserole Base
  • 4 medium Sweet Potatoes fresh or canned
  • 1/2 cup Unsalted Butter softened
  • 2 large Eggs cracked
  • 1 cup Evaporated Milk or almond milk for non-dairy
  • 1/2 cup Sugar brown sugar can be used
  • 1 teaspoon Cinnamon or nutmeg as substitute
  • 1/2 teaspoon Salt (Fine Sea Salt) or kosher salt
For the Topping
  • 1 cup Pecan Topping or walnuts for substitution
  • 2 cups Corn Flakes gluten-free if needed
  • 2 cups Mini Marshmallows or large marshmallows cut in halves

Method
 

Steps
  1. Preheat your oven to 375°F (190°C). Wash and prick the sweet potatoes with a fork, then bake for 45–60 minutes until soft.
  2. Once cooled, scoop the sweet potato flesh into a large mixing bowl. Preheat your oven to 400°F (200°C) and mix in softened butter, eggs, evaporated milk, sugar, cinnamon, and salt.
  3. Transfer the mixture to a greased 9x13 inch baking dish and bake for 20 minutes.
  4. While baking, combine melted butter with brown sugar and fold in chopped pecans.
  5. Sprinkle mini marshmallows on top of the casserole, bake for an additional 5 minutes.
  6. Finally, add pecan topping mixed with corn flakes and bake for another 10–15 minutes until golden brown.
