Steps
- Preheat your oven to 375°F (190°C). Wash and prick the sweet potatoes with a fork, then bake for 45–60 minutes until soft.
- Once cooled, scoop the sweet potato flesh into a large mixing bowl. Preheat your oven to 400°F (200°C) and mix in softened butter, eggs, evaporated milk, sugar, cinnamon, and salt.
- Transfer the mixture to a greased 9x13 inch baking dish and bake for 20 minutes.
- While baking, combine melted butter with brown sugar and fold in chopped pecans.
- Sprinkle mini marshmallows on top of the casserole, bake for an additional 5 minutes.
- Finally, add pecan topping mixed with corn flakes and bake for another 10–15 minutes until golden brown.
