- Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente, about 8-10 minutes. Reserve 1 cup pasta water before draining.
- Heat olive oil in a large skillet over medium heat. Add sausage, crumbling it as it cooks for 5-7 minutes until browned.
- Add bell peppers, onion, and garlic to skillet. Cook for 8-10 minutes, stirring until softened and aromatic.
- Stir in crushed tomatoes, heavy cream, and Italian seasoning. Simmer for 5-7 minutes until slightly thickened.
- Add drained pasta to skillet, tossing to coat in sauce. Use reserved pasta water to adjust sauce consistency as needed.
- Remove from heat, stir in Parmesan cheese, and season with salt and pepper. Serve hot, garnished with herbs or extra cheese.
