Ingredients
  

  • 1 pound large shrimp peeled and deveined
  • 8 ounces lump crabmeat drained and picked over for shells
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup mayonnaise
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon garlic powder
  • 1/2 teaspoon Old Bay seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Lemon wedges for serving

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the crabmeat, breadcrumbs, Parmesan cheese, mayonnaise, lemon juice, Dijon mustard, parsley, garlic powder, Old Bay seasoning, salt, and pepper. Mix gently until well combined.
  3. Take each shrimp and carefully butterfly it by slicing down the back, being careful not to cut all the way through. Open the shrimp slightly and place a spoonful of the crab mixture inside each one.
  4. Arrange the stuffed shrimp on a baking sheet. Drizzle with olive oil and sprinkle with additional salt and pepper if desired.
  5. Bake in the preheated oven for 15-20 minutes, or until the shrimp are cooked through and the topping is golden brown.
  6. Serve hot with lemon wedges on the side.
