Method

Step-by-Step Instructions
  1. Cook the rice according to package instructions, around 15-20 minutes. Bring salted water to a boil, then add the rice, reduce to low heat, and cover. Fluff with a fork and set aside.
  2. Cut chicken breasts into bite-sized pieces and season with salt, pepper, chili powder, smoked paprika, onion powder, and oregano.
  3. Heat olive oil in a skillet over medium-high heat for about 2 minutes. Add seasoned chicken pieces and cook for 6-8 minutes until golden brown and cooked through.
  4. In a mixing bowl, combine soy sauce, honey, rice vinegar, minced garlic, sriracha, sesame oil, and ground ginger. Whisk until fully blended.
  5. Pour the sticky sauce over the sautéed chicken in the skillet and let it simmer over medium heat for 3-5 minutes. Mix arrowroot powder with water if needed for thickening.
  6. Prepare the broccoli by steaming or roasting until tender for about 5-7 minutes. If roasting, toss with sesame oil and bake at 400°F for around 10 minutes.
  7. In a small bowl, combine mayo, sriracha, and water to create a smooth spicy mayo, adjusting the sriracha to your heat preference.
  8. Layer fluffy rice at the bottom of each bowl, top with sticky chicken, roasted broccoli, and drizzle with spicy mayo. Sprinkle sesame seeds if desired.

Notes

For best results, ensure chicken reaches an internal temperature of 165°F, and let the sauce simmer for optimal flavor melding.
