- Prepare the steak bites by drying and seasoning with salt and pepper. Heat a skillet over medium-high heat, add olive oil, and sear the steak bites for 2-3 minutes on each side. Transfer to a plate and cover with foil to keep warm.
- In the same skillet, lower heat to medium, add butter, and melt. Add minced garlic and sauté for 1 minute until fragrant but not browned.
- Pour in heavy cream and bring to a gentle simmer. Stir continuously and gradually whisk in grated Parmesan cheese until smooth. Use reserved pasta water to adjust thickness if necessary.
- Add drained shell pasta to the skillet and toss gently in the sauce. Warm for 1-2 minutes ensuring every piece is coated with the creamy sauce.
- Serve by placing pasta in bowls and arranging warm steak bites on top. Garnish with freshly chopped parsley.
