Preparation Steps
- Preheat your oven to 350°F (175°C). Gather your ingredients and equipment.
- Prepare the bell peppers by cutting off the tops and removing the seeds and membranes. Carve jack-o'-lantern faces if desired.
- In a skillet, heat olive oil over medium heat. Add diced onion and sauté for 2-3 minutes until translucent.
- Add ground beef to the skillet and cook for 4-5 minutes, breaking it apart until fully cooked. Drain excess grease.
- Stir in diced tomatoes, tomato sauce, orzo, and chicken stock. Season with Italian seasoning, salt, and pepper. Simmer for 10-12 minutes.
- Remove from heat and mix in 1 cup of shredded cheese until melted.
- Fill each pepper with the beef mixture and top with remaining cheese.
- Place filled peppers upright in a casserole dish, cover with tops, and bake for 30-35 minutes until tender.
