  • 1 cup Chicken Stock Vegetable stock can be used as well.
  • 1.5 teaspoons Dried Italian Seasoning Use individual herbs for a personal touch.
  • 1 teaspoon Salt Adjust according to your taste.
  • 1 teaspoon Pepper Adjust according to your taste.
  • 1.5 cups Shredded Cheese Use Cheddar or Monterey Jack for great taste.

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C). Gather your ingredients and equipment.
  2. Prepare the bell peppers by cutting off the tops and removing the seeds and membranes. Carve jack-o'-lantern faces if desired.
  3. In a skillet, heat olive oil over medium heat. Add diced onion and sauté for 2-3 minutes until translucent.
  4. Add ground beef to the skillet and cook for 4-5 minutes, breaking it apart until fully cooked. Drain excess grease.
  5. Stir in diced tomatoes, tomato sauce, orzo, and chicken stock. Season with Italian seasoning, salt, and pepper. Simmer for 10-12 minutes.
  6. Remove from heat and mix in 1 cup of shredded cheese until melted.
  7. Fill each pepper with the beef mixture and top with remaining cheese.
  8. Place filled peppers upright in a casserole dish, cover with tops, and bake for 30-35 minutes until tender.
