Ingredients
  

  • 2 cups cooked jasmine rice
  • 1 pound fresh salmon fillets
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 tablespoon sriracha adjust for spice preference
  • 1 teaspoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1 avocado sliced
  • 1 cup cucumber thinly sliced
  • 1 cup shredded carrots
  • 2 green onions chopped
  • 1 tablespoon sesame seeds
  • Salt and pepper to taste

Method
 

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. In a small bowl, mix together olive oil, soy sauce, sriracha, honey, garlic powder, ginger powder, salt, and pepper.
  3. Place the salmon fillets on the prepared baking sheet and brush the sauce mixture over the top of each fillet.
  4. Bake the salmon in the preheated oven for 12-15 minutes, or until it flakes easily with a fork.
  5. While the salmon is baking, prepare the rice bowls. Divide the cooked jasmine rice among four bowls.
  6. Once the salmon is done, remove it from the oven and let it cool for a few minutes before flaking it into large pieces.
  7. Top each bowl of rice with flaked salmon, sliced avocado, cucumber, shredded carrots, and chopped green onions.
  8. Sprinkle sesame seeds over the top for added crunch and flavor.
