- Slice the ribeye beef into thin strips and marinate with soy sauce, gochujang, sesame oil, brown sugar, minced garlic, and black pepper for at least 30 minutes.
- Whisk together mayonnaise, sriracha, sesame oil, garlic powder, and brown sugar in a bowl until smooth and creamy. Refrigerate to chill.
- In a large pot, bring beef broth to a simmer. Stir in gochugaru, soy sauce, rice vinegar, sesame oil, and salt. Let it simmer for about 10 minutes.
- Add ramen noodles to the pot and cook according to package instructions until al dente, about 3 minutes.
- Heat a grill pan over high heat and grill the marinated beef for 2–3 minutes on each side until caramelized.
- Assemble the ramen by dividing cooked noodles and broth in bowls, drizzling creamy sauce over top, and layering grilled beef. Garnish with green onions and sesame seeds.
