  • 4 cups Vegetable Broth Homemade or store-bought

Steps
  1. Wash and chop onions, carrots, celery, and garlic.
  2. Heat oil in a pot; add onions, carrots, celery, and cook until softened.
  3. Add minced garlic and curry powder; cook until aromatic.
  4. Stir in lentils, vegetable broth, and coconut milk; bring to a boil.
  5. Reduce heat, cover, and simmer for 20-25 minutes.
  6. Add spinach; cook until wilted.
  7. Ladle into bowls, season to taste, and serve garnished with cilantro or more coconut milk.
