Ingredients
  

  • 2 cups cooked chicken shredded
  • 1 cup black beans drained and rinsed
  • 1 cup corn frozen or canned (drained)
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup fresh cilantro chopped
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 1/2 cup ranch dressing or your favorite dressing

Method
 

  1. In a large bowl, combine the shredded chicken, black beans, corn, diced tomatoes, red onion, cheddar cheese, cilantro, lime juice, chili powder, cumin, salt, and pepper. Mix well until all ingredients are evenly coated.
  2. Lay out the flour tortillas on a clean surface.
  3. Divide the chicken mixture evenly among the tortillas, placing it in the center of each.
  4. Drizzle ranch dressing over the chicken mixture on each tortilla.
  5. Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top.
  6. If desired, slice each wrap in half diagonally and serve immediately, or wrap in foil for later.
