Ingredients
  

For the Noodles
  • 8 oz Flat Rice Noodles opt for wide noodles for the best experience
For Stir-Frying
  • 2 tbsp Vegetable Oil can substitute with peanut or sesame oil
  • 3 cloves Garlic fresh, minced for best flavor
For Protein
  • 1 lb Chicken, Shrimp, or Tofu choose your protein
For the Veggies
  • 2 cups Mixed Vegetables such as bell peppers, broccoli
For Flavor
  • 3 tbsp Soy Sauce use low-sodium if preferred
  • 1 tbsp Sugar or honey/maple syrup as alternatives
  • 1 tbsp Fish Sauce optional for vegan, can replace with soy sauce

Method
 

Step-by-Step Instructions
  1. Bring a large pot of water to a rolling boil. Add the flat rice noodles and cook until al dente, about 5–7 minutes. Drain and rinse under cold water to stop cooking.
  2. In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat until it shimmers, about 1–2 minutes.
  3. Add 3 cloves of minced garlic to the hot oil and sauté for about 1 minute, or until fragrant and golden.
  4. Add your chosen protein—chicken, shrimp, or tofu—and stir-fry for about 3–5 minutes for chicken (or 2–3 minutes for shrimp) until cooked through.
  5. Add your selected mixed vegetables and stir-fry for around 2 minutes until they are vibrant and slightly tender.
  6. Add your drained flat rice noodles, 3 tablespoons of soy sauce, and 1 tablespoon of sugar. Toss everything together vigorously for about 2 minutes.
  7. Remove from heat and transfer to a serving platter. Serve immediately while hot.
