Ingredients
  

For the Filling
  • 1 lb Ground beef Substitute with plant-based crumbles for vegetarian
  • 1 cup Chopped onion Use shallots for a milder taste
  • 1 can Black beans Can replace with kidney or cannellini beans
  • 1 can Diced tomatoes with green chilies Use plain diced tomatoes with jalapeños for more heat

  • 1 tsp Garlic powder Fresh minced garlic can be used instead

For the Topping
  • 1 cup Cornmeal Use gluten-free cornmeal for gluten-free option
  • 1 cup Milk Non-dairy milk can be used for lactose-free
  • 1 large Large egg Substitute with flax egg for vegan option
  • 1 cup Shredded cheddar cheese Swap with vegan cheese alternative for dairy-free
  • 1/4 cup Sliced black olives Optional for garnish, can be omitted
  • 1/4 cup Chopped fresh cilantro For garnish and added freshness

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat over medium heat, add the ground beef and chopped onion. Cook for 5-7 minutes until the beef is fully cooked and the onion is tender.
  3. Stir in the black beans, diced tomatoes with green chilies, chili powder, cumin, garlic powder, salt, and pepper. Let simmer for about 5 minutes.
  4. In a mixing bowl, combine cornmeal, milk, and the large egg until smooth.
  5. Grease a 9x13-inch baking dish and pour half of the cornmeal mixture into the base.
  6. Layer the beef and bean mixture over the cornmeal base.
  7. Pour the remaining cornmeal mixture over the beef layer and smooth it out.
  8. Sprinkle shredded cheddar cheese and sliced black olives on top.
  9. Bake for 30-35 minutes until the top is golden brown.
  10. Let cool for 10 minutes, then garnish with freshly chopped cilantro before serving.
