For the Filling
  • 12 sticks Mozzarella String Cheese Cheddar or gouda can be used
For Boiling and Topping
  • 2 tablespoons Baking Soda Creates pretzel texture
  • 1 large Egg (beaten) Milk can be used as a substitute
  • 1 tablespoon Coarse Sea Salt Regular salt can be used, but won't have the same crunch

Method
 

Preparation Steps
  1. Activate Yeast: Combine yeast and sugar in warm water. Let sit for 5 minutes until frothy.
  2. Prepare Dough: Mix flour, salt, rosemary, and parmesan. Add yeast mixture and knead for 5-7 minutes.
  3. Rise: Shape into a ball, place in oiled bowl, cover, and let rise for 1 hour until doubled.
  4. Preheat Oven: Set oven to 450°F and line baking sheet with parchment.
  5. Boil Water: Boil 10 cups of water and add baking soda.
  6. Shape Pretzels: Punch down dough, divide into 12 pieces, wrap around mozzarella sticks.
  7. Boil Pretzels: Boil each pretzel for 30 seconds, then place on baking sheet.
  8. Prepare for Baking: Brush with beaten egg and sprinkle with sea salt.
  9. Bake: Bake for 12-15 minutes until golden brown.
  10. Finish and Serve: Brush with melted butter before serving warm.
