Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and place a pizza stone inside to heat.
  2. In a skillet, heat 2 tablespoons of olive oil over medium-low heat, add half of the diced sweet onions, and sauté for 5-7 minutes.
  3. Sprinkle a pinch of sugar over the onions and cook until translucent and golden, about 10-15 minutes.
  4. In a bowl, mix 1 cup of pumpkin puree, 2 minced garlic cloves, chopped shallot, fresh thyme, and the remaining onions. Stir in ½ cup Parmesan cheese, salt, and pepper.
  5. Prepare the pizza dough according to package instructions and flatten it into a circular shape about 12 inches in diameter.
  6. Transfer the dough to the preheated stone or a baking sheet, spread the pumpkin topping, and layer with caramelized onions and arugula. Sprinkle Havarti cheese on top.
  7. Bake for 10-12 minutes or until the crust is golden and the cheese is melted, check occasionally.
  8. Allow the pizza to cool for a few minutes before slicing and serve warm.
