- Preheat your oven to 400°F (200°C). Gather all your ingredients and cooking tools.
- In a large mixing bowl, combine halved baby potatoes with olive oil, half of the ranch seasoning, garlic powder, paprika, salt, and pepper. Toss until well-coated, then spread them on one side of a greased sheet pan.
- Rub pork chops with remaining olive oil and ranch seasoning, then place on the empty side of the sheet pan alongside the potatoes.
- Bake the sheet pan in the preheated oven for 25-30 minutes until pork chops reach an internal temperature of 145°F (63°C) and potatoes are tender.
- For a crispy finish, switch the oven to broil for the last 2-3 minutes.
- Let the pork chops rest for a few minutes before serving, optionally garnishing with freshly chopped parsley or chives.
