Ingredients
  

Quesadilla Filling
  • 1 lb Frozen Chopped Spinach Thawed and drained
  • 1 small Red Onion Sliced thinly
  • 0.5 jar (12 oz) Roasted Red Peppers Chopped
  • 0.33 jar (9.5 oz) Kalamata Olives Chopped
  • handful Fresh Parsley Chopped, optional
  • 4 oz Feta Cheese Crumbled
  • 8 oz Shredded Mozzarella For melting
  • 1 tsp Dried Oregano
Quesadilla Base
  • 10 8-inch Flour Tortillas Can substitute with whole wheat or gluten-free

Method
 

Preparation
  1. Thaw frozen spinach in the microwave for 3-4 minutes and drain excess moisture.
  2. Slice red onion, chop roasted red peppers and kalamata olives.
  3. In a mixing bowl, combine thawed spinach, red onion, roasted red peppers, chopped olives, parsley, oregano, feta, and mozzarella. Stir gently until well mixed.
Cooking
  1. Lay a tortilla flat, add a generous portion of filling on one half, and fold over.
  2. Cook in a preheated non-stick skillet for 2-3 minutes each side until golden brown.
  3. Slice the cooked quesadillas into thirds and serve warm.
