Ingredients
  

  • 1 pound ground beef
  • 4 medium potatoes diced (about 4 cups)
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup beef broth
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup shredded cheddar cheese optional
  • Fresh parsley chopped (for garnish)

Method
 

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  2. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
  3. Stir in the diced potatoes, beef broth, paprika, oregano, salt, and black pepper. Bring to a simmer.
  4. Cover the skillet and reduce the heat to low. Cook for about 20-25 minutes, or until the potatoes are tender, stirring occasionally.
  5. If using, sprinkle the shredded cheddar cheese on top during the last 5 minutes of cooking. Cover again until the cheese is melted.
  6. Remove from heat, garnish with fresh parsley, and serve warm.
