  • 1/2 cup milk consider half-and-half or non-dairy options
  • 1 cup shredded cheddar can use mozzarella or Monterey Jack as substitutes
  • 1/2 cup Parmesan grated; can omit or use Pecorino Romano
  • salt and pepper to taste
  • 1 tsp Italian seasoning can swap with dried basil and oregano
  • 3 tbsp butter for sautéing; olive oil or margarine can be alternatives
  • 2 tbsp fresh parsley chopped, optional for garnish

Equipment

  • large skillet
  • Small saucepan

Method

Step-By-Step Instructions
  1. In a large skillet, melt 1 tablespoon of butter over medium heat. Add the diced onion and sauté for about 3–4 minutes until translucent and softened.
  2. Add the ground beef to the skillet, breaking it apart and cook for around 5–7 minutes until browned and cooked through.
  3. Stir in the minced garlic and let it cook for 1 minute until fragrant, stirring continuously.
  4. Add the uncooked rice, beef broth, Italian seasoning, salt, and pepper. Stir well and bring to a boil, then reduce heat to low and cover for about 18–20 minutes.
  5. While the rice cooks, melt 2 tablespoons of butter in a small saucepan over low heat. Gradually stir in the Parmesan and cheddar cheese along with the milk until smooth.
  6. After the rice is cooked, pour the creamy cheese sauce into the skillet and stir to combine. Cook uncovered for an additional 2–3 minutes until heated through.
  7. Optionally, sprinkle fresh chopped parsley on top before serving.
