  • 1 cup Heavy Cream or coconut milk
  • 1/2 cup Parmesan Cheese omit for vegan option
For the Pasta
  • 8 ounces Penne Pasta or pasta of choice
For Garnish
  • 1/4 cup Fresh Parsley optional

Method
 

Step-by-Step Instructions
  1. Coat the chicken breasts with olive oil and season with Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  2. Sear the chicken in a skillet over medium heat for 2-3 minutes on each side until golden brown. Remove from skillet.
  3. Layer the browned chicken at the bottom of the slow cooker, followed by bell peppers, onion, and minced garlic.
  4. Add diced tomatoes with juices and chicken broth, ensuring well-distributed, scraping any browned bits from the skillet.
  5. Cover and cook on low for 4-5 hours or high for 2-3 hours, until chicken reaches 165°F.
  6. Remove chicken, shred it, and return to the slow cooker.
  7. Stir in heavy cream and Parmesan cheese until well combined.
  8. Cook penne pasta according to package instructions, drain, and add to slow cooker, stirring gently.
  9. Heat together on low for another 15-20 minutes to allow flavors to meld.
  10. Serve in bowls, garnished with freshly chopped parsley.
