- Cook Tortellini: Bring a large pot of salted water to a rolling boil over high heat. Once boiling, gently add the cheese tortellini and cook according to package instructions until al dente, about 3–5 minutes. Before draining, reserve ½ cup of pasta water. Drain the tortellini and keep warm.
- Prepare Steak Bites: While the tortellini is cooking, pat the steak dry with paper towels. Season both sides with Cajun seasoning, smoked paprika, garlic powder, salt, and black pepper. Heat olive oil in a skillet over medium-high heat and sear the steak for 2–3 minutes on each side until golden brown. Remove from skillet and let rest.
- Make Cowboy Butter Sauce: In the same skillet, reduce the heat to medium, add butter and let melt. Add minced garlic and optional red pepper flakes, cooking for 1–2 minutes. Stir in Dijon mustard and lemon juice, mixing for another minute, then toss in parsley and chives.
- Combine Ingredients: Return the warm tortellini and resting steak to the skillet. Dice steak into bite-sized pieces and gently toss with the sauce. Gradually add reserved pasta water until desired consistency is reached.
