Dough Preparation
- In a large mixing bowl, combine warm water with sugar and yeast. Let it sit for 5-10 minutes until frothy.
- Add flour, salt, and olive oil to the yeast mixture. Stir until a dough forms, then knead on a floured surface for 8-10 minutes.
Dough Rising
- Transfer the kneaded dough to a greased bowl. Cover and let it rise in a warm area for about 1 hour.
Filling Preparation
- Heat a skillet over medium-low heat and sauté onions for 20 minutes until caramelized.
- Add garlic and spinach to the skillet, cooking for another 3-4 minutes until the spinach wilts. Optionally stir in nutritional yeast.
Roll Preparation
- Punch down the risen dough and roll it out into a rectangle about 1/4 inch thick.
- Spread the sautéed filling evenly over the dough, leaving a small border.
- Roll tightly into a log shape and slice into about 12 pieces.
- Place the rolls cut-side up in a greased baking dish with space between them.
Second Rise
- Cover the assembled rolls with a towel and let rise for another 30 minutes in a warm area.
- Preheat the oven to 375°F.
Baking
- Bake the rolls for 25-30 minutes, until golden brown and puffed.
- Let them cool in the dish for a few minutes before serving.
Serving
- Serve warm with marinara sauce for dipping. Enjoy!
