  • 3 cups All-Purpose Flour Can substitute with a gluten-free flour blend.
  • 2 tablespoons Coconut Sugar or Granulated Sugar Brown sugar or maple syrup can be alternatives.
  • 1 teaspoon Salt
  • 2 tablespoons Olive Oil A neutral vegetable oil can also work.
  • 2 teaspoons Active Dry Yeast Ensure it's fresh.
  • 1 cup Warm Water Should be about 110°F (43°C).
Filling Ingredients
  • 2 cups Spinach Fresh or thawed frozen works perfectly.
  • 2 large Onions Chopped and caramelized.
  • 2 cloves Garlic Minced or powdered.
  • 2 tablespoons Nutritional Yeast Optional for cheesy flavor.
  • 1 cup Marinara Sauce Choose a thick variety to avoid sogginess.

Method
 

Dough Preparation
  1. In a large mixing bowl, combine warm water with sugar and yeast. Let it sit for 5-10 minutes until frothy.
  2. Add flour, salt, and olive oil to the yeast mixture. Stir until a dough forms, then knead on a floured surface for 8-10 minutes.
Dough Rising
  1. Transfer the kneaded dough to a greased bowl. Cover and let it rise in a warm area for about 1 hour.
Filling Preparation
  1. Heat a skillet over medium-low heat and sauté onions for 20 minutes until caramelized.
  2. Add garlic and spinach to the skillet, cooking for another 3-4 minutes until the spinach wilts. Optionally stir in nutritional yeast.
Roll Preparation
  1. Punch down the risen dough and roll it out into a rectangle about 1/4 inch thick.
  2. Spread the sautéed filling evenly over the dough, leaving a small border.
  3. Roll tightly into a log shape and slice into about 12 pieces.
  4. Place the rolls cut-side up in a greased baking dish with space between them.
Second Rise
  1. Cover the assembled rolls with a towel and let rise for another 30 minutes in a warm area.
  2. Preheat the oven to 375°F.
Baking
  1. Bake the rolls for 25-30 minutes, until golden brown and puffed.
  2. Let them cool in the dish for a few minutes before serving.
Serving
  1. Serve warm with marinara sauce for dipping. Enjoy!
