Method
 

Step-by-Step Instructions for Bacon Fried Rice
  1. Heat a large nonstick pot over medium-high heat for about 2 minutes until hot.
  2. Add the bacon strips to the pot, cooking for 5–7 minutes until crispy and golden brown. Transfer to a plate lined with paper towels.
  3. In the same pot, add 1 tablespoon of sesame oil and heat over medium heat for 1 minute. Toss in diced onion and minced garlic, sautéing for 2–3 minutes until fragrant.
  4. Stir in the frozen vegetables and cook for 3–4 minutes until tender and vibrant.
  5. Push the vegetables to one side of the pot and pour in the lightly beaten eggs, scrambling for about 2 minutes until fully cooked.
  6. Add the day-old rice, reserved bacon, soy sauce, and Sriracha, stirring together for 3–4 minutes until heated through.
  7. Remove from heat and garnish with extra crumbled bacon and finely sliced green onions. Serve immediately.
