Step-by-Step Instructions for Bacon Fried Rice
- Heat a large nonstick pot over medium-high heat for about 2 minutes until hot.
- Add the bacon strips to the pot, cooking for 5–7 minutes until crispy and golden brown. Transfer to a plate lined with paper towels.
- In the same pot, add 1 tablespoon of sesame oil and heat over medium heat for 1 minute. Toss in diced onion and minced garlic, sautéing for 2–3 minutes until fragrant.
- Stir in the frozen vegetables and cook for 3–4 minutes until tender and vibrant.
- Push the vegetables to one side of the pot and pour in the lightly beaten eggs, scrambling for about 2 minutes until fully cooked.
- Add the day-old rice, reserved bacon, soy sauce, and Sriracha, stirring together for 3–4 minutes until heated through.
- Remove from heat and garnish with extra crumbled bacon and finely sliced green onions. Serve immediately.
