- Heat 1 tablespoon of oil in a large non-stick saucepan over medium-high heat. Add 1 pound of ground beef and brown for 5-7 minutes.
- Reduce heat to medium, stir in 1 tablespoon of grated ginger and 1/4 cup of soy sauce. Sauté for 10-15 seconds until fragrant.
- Pour in 1 cup of water and add 1/2 teaspoon of white pepper powder. Simmer and cover for 10 minutes.
- In a separate pot, boil water and cook 8 ounces of vermicelli according to package instructions, about 3-4 minutes.
- Mix 1 tablespoon of corn flour with 1/2 cup of water until smooth, add to the beef mixture and stir until thickened for 1-2 minutes.
- Add the cooked vermicelli to the beef mixture and toss gently to combine. Cook on low heat for 1-2 minutes.
- Transfer to a serving dish and garnish with chopped spring onions. Optionally drizzle with Chinese dark vinegar and chili oil.
