For the Sauce and Noodles
  • 1 tablespoon Corn Flour (Corn Starch) Mix with water before adding to prevent clumping.
  • 8 ounces Vermicelli Can substitute with rice noodles or egg noodles.
  • 1 tablespoon Chinese Dark Vinegar Optional for added tang.
  • 1 tablespoon Chinese Chili Oil Adjust according to spice preference.
For Garnish
  • 2 tablespoons Spring Onion (Chopped) Green onions or scallions can be used.

Method
 

Step-by-Step Instructions
  1. Heat 1 tablespoon of oil in a large non-stick saucepan over medium-high heat. Add 1 pound of ground beef and brown for 5-7 minutes.
  2. Reduce heat to medium, stir in 1 tablespoon of grated ginger and 1/4 cup of soy sauce. Sauté for 10-15 seconds until fragrant.
  3. Pour in 1 cup of water and add 1/2 teaspoon of white pepper powder. Simmer and cover for 10 minutes.
  4. In a separate pot, boil water and cook 8 ounces of vermicelli according to package instructions, about 3-4 minutes.
  5. Mix 1 tablespoon of corn flour with 1/2 cup of water until smooth, add to the beef mixture and stir until thickened for 1-2 minutes.
  6. Add the cooked vermicelli to the beef mixture and toss gently to combine. Cook on low heat for 1-2 minutes.
  7. Transfer to a serving dish and garnish with chopped spring onions. Optionally drizzle with Chinese dark vinegar and chili oil.
