- Preheat your grill to 350°F (medium-high heat). Season the chicken with salt and pepper and grill for 5-7 minutes per side until cooked through.
- In a bowl, mix chipotle chiles with mayonnaise and lime juice for chipotle mayo. Mash avocado and mix with ranch dressing for avocado ranch sauce.
- Warm the tortillas in a skillet for about 30 seconds on each side. Prepare black beans, Mexican rice, lettuce, tomatoes, cheese, and tortilla strips.
- Lay a tortilla flat and spread chipotle mayo. Layer chicken, black beans, rice, lettuce, tomatoes, and cheese, leaving edges clear.
- Tuck in sides of tortilla and roll tightly from bottom to top. Place seam side down and repeat for all burritos.
- Heat a nonstick skillet, add oil, and cook rolled burritos seam side down for about 2-3 minutes until golden brown. Flip and brown the other side.
- Remove burritos from skillet and serve warm, optionally with extra sauces for dipping.
