Equipment

  • Food Processor
  • jelly roll pan
  • mixing bowl
  • Rolling Pin
  • Plastic wrap
  • oven

Method

Dough Preparation
  1. Mix together flour, sugar, and salt for the crust. Add cold, cubed butter and pulse until coarse crumbs form. Gradually add ice water until dough comes together. Divide into two discs, wrap in plastic, and chill for 1 hour.
Filling Preparation
  1. Slice ripe plums and mix with sugar and cinnamon in a bowl. Let the plums sit for about 15 minutes to release juices.
Assembly
  1. Preheat oven to 375°F. Roll out dough into a large rectangle to fit the jelly roll pan. Place dough in the pan, prick crust with a fork, and spread cherry preserves over the base.
Placing the Filling
  1. Layer the sliced plums evenly over the cherry preserves. Top with remaining cinnamon sugar mixture and brush crust edges with melted butter.
Baking
  1. Bake the pie in the preheated oven for 50-60 minutes until golden brown and bubbly. Cover with foil if crust darkens too quickly.
Cooling and Serving
  1. Let the pie cool for at least 30 minutes before slicing. Serve warm with vanilla ice cream or whipped cream.

Notes

For best results, use cold ingredients and allow pie to cool completely before slicing. You can also experiment with different fruit preserves for variety.
