Method
Prepare the Crust
- In a food processor, combine all-purpose flour, salt, and sugar. Add cold butter and pulse until the mixture resembles coarse crumbs. Gradually pour in ice water until the dough clumps together. Divide the dough in two, wrap in plastic, and refrigerate for 1 hour.
Prepare the Filling
- Slice the ripe plums and toss them with half the sugar and cinnamon. Let rest for 15-20 minutes.
Roll Out the Dough
- Roll out one piece of the chilled dough on a floured surface to fit a 15x10-inch pan. Press into the corners and poke holes in the bottom.
Assemble the Pie
- Spread cherry preserves on the crust, arrange sliced plums over it, then sprinkle with remaining sugar and cinnamon.
Bake the Pie
- Preheat oven to 375°F (190°C). Bake for 50-60 minutes until the filling bubbles and the crust is golden.
Cool and Slice
- Let the pie cool for at least 30 minutes before slicing into squares. Serve warm or at room temperature.
Notes
Using cold ingredients ensures a flaky texture. Adjust sugar based on plum ripeness and feel free to experiment with different fruits in the filling.
