Ingredients
  

  • 2 cups frozen blueberries
  • 2 cups frozen strawberries
  • 1 cup coconut milk
  • 1 tablespoon honey or maple syrup optional
  • 1 cup ice cubes
  • Fresh mint leaves for garnish optional

Method
 

  1. In a blender, combine the frozen blueberries, 1/2 cup coconut milk, and 1/2 cup ice cubes. Blend until smooth. Pour the mixture into a glass and set aside.
  2. Rinse the blender, then add the frozen strawberries, 1/2 cup coconut milk, and 1/2 cup ice cubes. Blend until smooth. Pour the strawberry mixture over the blueberry layer in the glass.
  3. In the same blender, combine the remaining coconut milk and ice cubes. Blend until smooth and creamy. Pour this layer on top of the strawberry layer.
  4. Garnish with fresh mint leaves if desired. Serve immediately with a straw or spoon.
