Add the olive oil to the seasoning mixture and stir until well combined.
Add the chicken thighs to the bowl and toss them in the seasoning mixture until they are evenly coated.
Place the seasoned chicken thighs on a baking sheet lined with parchment paper, skin side up.
Bake in the preheated oven for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F and the skin is crispy.
Remove from the oven and let the chicken rest for 5 minutes before serving.
Garnish with chopped fresh parsley before serving.
