Method

Step-by-Step Instructions
  1. Begin by cutting boneless, skinless chicken breasts or thighs into bite-sized pieces. In a bowl, combine the chicken with peanut butter, soy sauce, freshly grated ginger, and minced garlic. Mix well to coat the chicken evenly and let it marinate for at least 30 minutes.
  2. Heat 2 tablespoons of vegetable or peanut oil in a large skillet over medium-high heat. Once the oil is shimmering, add the marinated chicken pieces in a single layer. Cook for about 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through.
  3. Once the chicken is fully cooked, lower the heat to medium and stir in any leftover marinade or additional peanut sauce if desired. Allow the mixture to simmer for 2-3 minutes, stirring gently to coat all the chicken evenly.
  4. Plate the chicken over steamed jasmine rice or toss it with noodles. Garnish with chopped peanuts and fresh cilantro. Serve immediately.
