Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a shallow bowl, whisk the eggs until well beaten. In another bowl, combine the Parmesan cheese, breadcrumbs, garlic powder, onion powder, Italian herbs, salt, and pepper.
Pat the chicken breasts dry with paper towels. Dip each chicken breast into the beaten eggs, allowing any excess to drip off, then coat it in the Parmesan breadcrumb mixture, pressing gently to adhere.
Place the coated chicken breasts on the prepared baking sheet. Drizzle the olive oil over the top of the chicken.
Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the crust is golden brown. An internal temperature of 165°F (75°C) is recommended.
Remove from the oven and let rest for a few minutes before serving. Garnish with chopped parsley if desired.
