Method

Step‑By‑Step Instructions
  1. In a large pot or Dutch oven, add 2 tablespoons of extra-virgin olive oil and heat over medium heat. Once the oil shimmers, add one finely chopped yellow onion and cook for about 3-4 minutes until translucent. Stir in 4 minced garlic cloves and sauté for another minute until fragrant.
  2. Season 4 chicken thighs with kosher salt, black pepper, 1 teaspoon of ground cumin, and 1 teaspoon of smoked paprika. Increase the heat to medium-high and add the chicken thighs to the pot. Brown them for about 5-7 minutes on each side until they develop a lovely golden crust.
  3. Once the chicken is nicely browned, stir in 1 cup of long-grain white rice, 2 tablespoons of apple cider vinegar, and 2 cups of low-sodium chicken broth. Add 1 can of chipotle chiles in adobo sauce, 1 teaspoon of dried oregano, 1 teaspoon of garlic powder, and 1 teaspoon of onion powder to the pot. Mix everything well.
  4. Bring the mixture to a gentle simmer over medium heat. Once bubbling, reduce the heat to low and cover the pot tightly. Let it cook for 15-20 minutes, or until the rice is tender and has absorbed all the liquid.
  5. After the rice has cooked, remove the pot from the heat and fold in 2 cups of chopped Tuscan kale. Cover the pot again and let it sit for about 2-3 minutes. The residual heat will wilt the kale.
  6. Reveal your delicious One-Pot Adobo Chicken and Rice by fluffing it gently with a fork. Serve warm, and consider garnishing with fresh lime wedges or extra spices for an added zing.

Notes

For best results, check for doneness to avoid overcooking the chicken and adjust spice levels as per preference.
