  • 1 teaspoon Ground Cumin
  • 1 teaspoon Garlic Powder Optional
  • 1 teaspoon Salt Adjust per broth saltiness
  • 1 teaspoon Paprika Smoked paprika for unique flavor
  • 1/2 teaspoon Turmeric Powder

Method
 

Step-by-Step Instructions
  1. Prepare the seasoning mix by combining all spices in a bowl.
  2. Marinate the chicken with olive oil, lemon juice, and seasoning mix for 30 minutes.
  3. Rinse the rice under cold water for 2 minutes and soak for 30 minutes before draining.
  4. Heat olive oil in a pan, add marinated chicken, and cook until browned.
  5. Sauté onions until translucent, then add garlic and cook for 30 seconds.
  6. Incorporate the soaked rice and remaining seasoning mix; sauté for 1 minute.
  7. Pour in the chicken broth, add a bay leaf and cinnamon stick; bring to boil.
  8. Stir in peas and reserved chicken; reduce heat and cook for 15-20 minutes.
  9. Let sit covered for 10 minutes, then fluff rice with a fork.
  10. Garnish with fresh coriander and serve warm.

Notes
