- Begin by seasoning your chicken generously with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Sear the chicken for 4-5 minutes on each side until golden brown. Remove and set aside.
- In the same skillet, add butter, white wine, lemon juice, and olive juice. Scrape the browned bits from the bottom of the pan. Simmer for 3-4 minutes.
- Stir in the artichokes, lemon wedges, and olives into the sauce. Cook for another 3-5 minutes to blend the flavors and thicken.
