Step-by-Step Instructions
  1. In a large skillet, heat a drizzle of oil over medium heat. Season the chicken thighs or breasts with garlic powder, onion powder, smoked paprika, salt, and pepper. Sear the chicken for about 5 minutes on each side until browned and reaches an internal temperature of 165°F. Remove chicken and set aside.
  2. In a small bowl, combine BBQ sauce with honey, mixing until well combined. Pour the sauce into the same skillet, stirring over medium heat for 1-2 minutes.
  3. Add uncooked rice to the skillet, stirring gently to coat in the BBQ sauce. Pour in chicken broth, bring to a gentle simmer, then return seared chicken on top. Cover and cook on low for about 20 minutes.
  4. After cooking for 15 minutes, sprinkle mixed vegetables over chicken and rice. Cover and allow to steam for an additional 5 minutes.
  5. Remove the skillet from heat and let sit, covered, for 5 minutes. Fluff rice with a fork, mixing in chicken and vegetables.
