  • 1 pound ground beef
  • 1 tablespoon taco seasoning
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup sliced green onions
  • 1/4 cup salsa
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Method
 

  1. In a skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain any excess fat.
  2. Stir in the taco seasoning and a splash of water (about 2 tablespoons). Mix well and let simmer for 2-3 minutes until heated through. Season with salt and pepper to taste.
  3. In a large bowl, layer the cooked rice, followed by the seasoned beef.
  4. Top the beef with shredded lettuce, diced tomatoes, and cheddar cheese.
  5. Add a dollop of sour cream and a sprinkle of green onions on top.
  6. Serve with salsa on the side for drizzling.
