For the Batter
  • 4 medium Ripe Bananas Frozen bananas work well; thaw and drain excess liquid.
  • 2 cups All-Purpose Flour Can substitute with whole wheat or gluten-free flour.
  • 1 cup Granulated Sugar Brown sugar can be used for a deeper flavor.
  • 1/2 cup Unsalted Butter Replace with vegetable oil for a dairy-free option.
  • 2 large Eggs Can substitute with flax eggs or applesauce for vegan.
  • 1 teaspoon Baking Soda Ensure it's fresh for the best results.
  • 1/2 teaspoon Salt Balances sweetness.
  • 2 teaspoons Vanilla Extract Almond extract can be used for variation.
  • 1/2 cup Buttermilk Use milk with a splash of vinegar as a substitute.

Equipment

  • Stand Mixer
  • loaf pans
  • whisk
  • spatula

Method

Step-by-Step Instructions
  1. Preheat your oven to 350ºF (175ºC) and generously butter two 8.5 x 4.5-inch loaf pans.
  2. In a stand mixer, cream together softened unsalted butter and granulated sugar on medium speed until light and fluffy, about 3-4 minutes.
  3. In a separate bowl, whisk together all-purpose flour, baking soda, and salt until well combined.
  4. With the mixer running, gradually add the eggs, one at a time, to the butter and sugar mixture, beating well after each addition.
  5. Mix in the vanilla extract, buttermilk, and mashed bananas until just combined.
  6. Slowly add the dry ingredient mixture into the wet banana mixture and gently fold until just combined.
  7. Evenly divide the batter between the two prepared loaf pans.
  8. Place the loaf pans in the preheated oven and bake for about 1 hour.
  9. Once baked, remove the banana bread from the oven and let it cool in the pans for about 10 minutes.

Notes

For best results, use very ripe bananas and avoid overmixing.
