Method
 

  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  2. Mash together 3 large or 4 small overripe bananas until smooth with some lumps.
  3. Add ½ cup melted unsalted butter, ⅔ cup sugar, 2 eggs, and 1 teaspoon vanilla extract. Whisk until well blended.
  4. Sift in 2 cups all-purpose flour, 1 teaspoon baking soda, ½ teaspoon baking powder, 1 teaspoon cinnamon, and ¼ teaspoon salt. Mix gently.
  5. Pour batter into the prepared loaf pan, filling about 2/3. Level the surface.
  6. Bake for approximately 60 minutes until the top is golden and a toothpick comes out clean.
  7. Let the loaf cool in the pan for 5-10 minutes before transferring to a wire rack to cool completely.
