Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Finely mince the red onion and red bell pepper using a food processor, then drain excess liquid.
  3. In a large mixing bowl, combine minced vegetables with ground chicken, minced garlic, and spices; mix thoroughly.
  4. Trim the tortillas into rectangles, spread chicken mixture on each, and cut into smaller pieces for skewering.
  5. Insert skewers through the chicken-tortilla pieces and arrange on the baking sheet.
  6. Bake the kebabs for 15 minutes. Meanwhile, melt salted butter in a saucepan and add minced garlic and parsley.
  7. Brush kebabs with garlic butter mixture and bake for another 20 minutes until golden brown.
  8. Remove from oven, cool slightly, take out skewers, and serve with dipping sauce or salad.

Notes

Ensure to squeeze out all excess liquid from minced veggies to prevent sogginess. Use soaked wooden skewers for better results.
