Instructions
- In a mixing bowl, combine olive oil, minced garlic, lemon juice, dried oregano, thyme, salt, and black pepper to create a flavorful marinade. Coat the sirloin steak evenly with the mixture, ensuring every inch is covered. Let it marinate for at least 30 minutes at room temperature, or up to 4 hours in the fridge for deeper flavor development.
- While the steak marinates, prepare the tzatziki sauce by combining Greek yogurt, grated cucumber, minced garlic, lemon juice, salt, and a sprinkle of dried oregano in a bowl. Mix these ingredients until smooth and well incorporated. Cover the bowl and chill the tzatziki in the refrigerator for at least 15 minutes.
- In a small bowl or jar, whisk together olive oil, honey (if using), lemon juice, and dried oregano for a zesty vinaigrette. Blend until well combined and emulsified.
- Heat a large skillet over medium-high heat and add a drizzle of olive oil. Once hot, place the marinated steak in the skillet and sear for about 4-5 minutes on each side. Let it rest for 5 minutes before slicing thinly against the grain.
- To create your Mediterranean Steak Bowl, start with a layer of cooked grains, fan the sliced steak over the grains, and sprinkle the halved cherry tomatoes, diced cucumber, thinly sliced red onion, kalamata olives, and crumbled feta cheese on top.
- Drizzle the chilled tzatziki over the assembled bowl, followed by the homemade vinaigrette. Garnish with fresh herbs like parsley or dill.
