Method
 

Step-by-Step Instructions
  1. Wash the Roma tomatoes and cucumber under cool running water. Dice the tomatoes and slice the cucumber into bite-sized pieces. If using, finely chop a small amount of red onion. Place all ingredients in a large mixing bowl.
  2. Rinse the parsley and pat it dry. Chop it roughly to release its oils and add to the bowl. Gently toss to combine.
  3. Sprinkle kosher salt and black pepper over the salad, tossing gently for even seasoning. Let sit for about 5 minutes.
  4. In a small bowl, whisk together extra virgin olive oil, lemon juice, and ground sumac. Drizzle over the salad and toss to coat evenly.
  5. Taste and adjust salt, pepper, or lemon juice as needed. Serve immediately or let chill in the refrigerator for 15-30 minutes before serving.
