Ingredients
  

  • 2 cups cooked brown rice
  • 1 cup canned chickpeas rinsed and drained
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1 bell pepper diced (any color)
  • 1/2 red onion finely chopped
  • 1/2 cup feta cheese crumbled
  • 1/4 cup Kalamata olives pitted and sliced
  • 1/4 cup fresh parsley chopped
  • 1/4 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine the cooked brown rice, chickpeas, cherry tomatoes, cucumber, bell pepper, red onion, feta cheese, olives, and parsley. Toss gently to mix all the ingredients evenly.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper until well combined.
  3. Pour the dressing over the rice mixture and toss again to coat all the ingredients evenly.
  4. Let the bowl sit for about 10 minutes to allow the flavors to meld, or refrigerate for up to an hour for a chilled option.
  5. Serve the Mediterranean rice bowl in individual bowls or on a large platter. Enjoy!
