Preparation Steps
- Preheat your oven to 400°F (200°C) and lightly grease a suitable baking dish with olive oil.
- Season your chicken breasts with salt, black pepper, dried oregano, and thyme. Place the seasoned chicken evenly in the prepared baking dish.
- Thinly slice the zucchini, halve the cherry tomatoes, and slice the red bell pepper. Chop the red onion into small pieces. Layer these vegetables over the chicken in the baking dish.
- In a small mixing bowl, whisk together extra virgin olive oil, minced garlic, additional oregano, and thyme, along with salt and pepper. Pour this marinade over the chicken and vegetables in the baking dish.
- Bake uncovered in the preheated oven for 25–30 minutes until the chicken's internal temperature reaches 160°F (75°C).
- Let the dish rest for a few minutes. Garnish with chopped parsley, basil, and crumbled feta cheese before serving.
