Ingredients
  

For the Chicken
  • 2 pieces Chicken Breasts Chicken thighs can be used for extra moisture and flavor.
For the Vegetables
  • 2 medium Zucchini Spiralize for a fun twist.
  • 1 cup Cherry Tomatoes Can substitute with quartered regular tomatoes.
  • 1 large Red Bell Pepper Yellow or green bell peppers work well too.
  • 1 medium Red Onion Yellow onion is a suitable substitute.
For the Marinade
  • 3 tablespoons Extra Virgin Olive Oil Can be replaced with avocado oil.
  • 3 cloves Garlic Minced; garlic powder can substitute if short on time.
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
For the Finish
  • 1/4 cup Fresh Parsley Chopped for garnish.
  • 1/4 cup Fresh Basil Chopped for garnish.
  • 1/2 cup Feta Cheese Can use goat cheese or Parmesan as alternatives.

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and lightly grease a suitable baking dish with olive oil.
  2. Season your chicken breasts with salt, black pepper, dried oregano, and thyme. Place the seasoned chicken evenly in the prepared baking dish.
  3. Thinly slice the zucchini, halve the cherry tomatoes, and slice the red bell pepper. Chop the red onion into small pieces. Layer these vegetables over the chicken in the baking dish.
  4. In a small mixing bowl, whisk together extra virgin olive oil, minced garlic, additional oregano, and thyme, along with salt and pepper. Pour this marinade over the chicken and vegetables in the baking dish.
  5. Bake uncovered in the preheated oven for 25–30 minutes until the chicken's internal temperature reaches 160°F (75°C).
  6. Let the dish rest for a few minutes. Garnish with chopped parsley, basil, and crumbled feta cheese before serving.
