Step-by-Step Instructions for High-Protein Mediterranean Chicken Stir-Fry
  1. Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat until shimmering, about 1-2 minutes.
  2. Add the cubed chicken breasts in a single layer, seasoning them with salt, pepper, dried oregano, and thyme. Cook undisturbed for 2-3 minutes until golden brown, then cook for an additional 5-6 minutes until internal temperature reaches 165°F. Set aside.
  3. In the same skillet, pour in the remaining olive oil and add the chopped red and yellow bell peppers, zucchini, and red onion. Sauté for 3-4 minutes until tender-crisp.
  4. Stir in the minced garlic and cook for an additional 60 seconds until fragrant, but be careful not to overcook.
  5. Return the cooked chicken to the skillet, add the rinsed chickpeas and Kalamata olives, and heat through for 1-2 minutes.
  6. Remove from heat, drizzle in fresh lemon juice, and toss with chopped parsley. Serve hot topped with crumbled feta.

Notes

Consider marinating chicken for enhanced flavor, and store feta separately until serving to maintain its texture.
