Cooking Steps
  1. Preheat your oven to 450°F (232°C) and warm the baking dish with olive oil for about 5 minutes.
  2. Season the haddock fillets with salt, pepper, and chili flakes, rubbing evenly.
  3. Add sliced garlic and half of the thyme to the warm oil, then nestle the baby tomatoes and haddock in the mixture.
  4. Scatter olives, jalapeños, and capers over the fish.
  5. Lower the oven temperature to 375°F (190°C) and bake for 15-18 minutes.
  6. Switch to broil mode for 2 minutes to achieve a charred finish.
  7. Drizzle infused olive oil over the fish and serve with crusty bread or salad.
