Meatloaf Base
  • 1 lb Ground Beef or Mixed Meat
  • 1 cup Breadcrumbs use gluten-free for a gluten-free version
  • 1 large Egg consider using an extra-large for added protein
  • 1/2 cup Milk can replace with chicken broth
  • 1 small Onion finely chopped
  • 2 cloves Garlic minced
  • 2 tbsp Worcestershire Sauce or soy sauce
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Dried Thyme optional
Glaze
  • 1/2 cup Ketchup or BBQ sauce
  • 1 tbsp Brown Sugar or honey/maple syrup
  • 1 tbsp Mustard Dijon or whole grain

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grease or line the muffin pan.
  2. In a large bowl, combine ground meat with breadcrumbs, egg, milk, onion, garlic, Worcestershire sauce, salt, black pepper, and thyme. Mix gently.
  3. Scoop the mixture into the muffin cups, filling them about ¾ full, and press down gently.
  4. In a separate bowl, whisk together ketchup, brown sugar, and mustard until smooth.
  5. Top each muffin with the glaze and bake for 20-25 minutes, until firm and reaching an internal temperature of 160°F (71°C).
  6. Let the muffins rest for 5 minutes before serving warm.
